Guacamole
The most well known dip, made from bright ripe and green Avocados

Ingredients

300g avocado (mashed)
15g lemon juice
50g red onion (very finely diced)
10g garlic (grated)
25g pickled jalapeno (finely choped)
Salt, pepper, parsley
Method
​

Make sure you Avocados are actually bright green inside, but not firm anymore.
Mash it all togehter in a bowl and put in the fridge for a few hours.
That's it!

Good to know
You have to develop a feeling for when an Avocado is ripe. If they are really soft from the outside, they be already brown from the inside, which isn't nice for the colour of the Guacamole. If they are to hard, it has to much of a bite and doesn't get mashed really.
